 Denomination: Terre Siciliane IGP White 

Production Area: Mazara del Vallo, South-Western Sicily, Contrada Gilletto 

Alcohol content and analytical data: 13.5% vol, Sugars 1.5 g./l. 

Sulfur (SO2) free 50 mg / l. total 100 mg / l. 

Grapes: Grillo 80% Zibibbo (Moscato d’Alessandria), 

approximately 20%, but the quantities are not exactly determinable as the clusters of the two varieties are harvested and vinified together at the same time 

Land and Climate: The vineyard consists of a “costa” of Grillo at about 40 meters above sea level. and from three terraces of Zibibbo which are located respectively at 50, 70 and 90 meters above sea level. Medium-textured, highly calcareous soils, rich in calcium and very permeable. The vineyard is 900 meters far from the sea and about 145 km from the African continent, the winters are mild and not very rainy and the summers are dry and windy. 

Vineyard: The vines are cultivated in counter espalier with Guyot pruning, exposure to the South, 3750 plants per hectare, yield of 50 quintals per hectare. The vineyard was left natural, it was not irrigated (except by rain), it was only manually pruned and 2 copper and sulfur passages were carried out. 

Vineyard Age: The vineyard was planted in February 2012 

Vinification It ferments in steel vats for two weeks, remains sur lies for a month and a half and is aged in steel vats for a further eight months, and is finally put on the market after being left in the bottle lying down for another eight months. 4,600 Burgundy bottles were produced from the 2019 vintage. 

Pairings: Extraordinary versatility in combinations, thanks to qualities of power and structure, but also of remarkable acid freshness. It perfectly accompanies Sicilian fish dishes, from Gambero Rosso di Mazara del Vallo to Sarde a Beccafico, not forgetting white meats, chicken, turkey and rabbit. 

Serving temperature: 10-12 ° C, leave to oxygenate for 10 minutes before serving. The wine will continue to evolve throughout the service. 

Longevity: A white wine that seems to show longevity qualities, it will probably be able to evolve in the bottle up to 5 years after the harvest.
